Didier Defaix's family owns 27 hectares in Chablis, and he is the 5th generation to look after these vines. Located on the slopes of the village Milly and on the right bank of the river Serein, the grapes in the Côte de Lechet are considered to create wines with exceptional ageing potential. The use of stainless steel during fermentation delivers a fresh and bright white which expresses citrus and mineral aromas reminiscent of gunflint.

Didier Defaix comes from a long family tradition of vine-growers and is the son of Bernard Defaix. All aspects of production, from the vineyard to the winery, are undertaken by him and his family. For many years they have moved towards a sustainable and more ecological way of farming - which has resulted in them becoming fully organic.

This white wine, recognised in 1997 as a wine of "Indicazione Geografica Tipica", derives from Catarratto Inzolia grapes which are cultivated on the small island of Salina. It is a lively straw-yellow colour with a greenish reflection, and has an aroma reminiscent of spring flowers and a fresh, flavoursome and fruity taste. It is a characteristic wine, whose aroma recalls the intense fragrances of the island where it comes from.

The producer
Colosi is a company that has been operating in the wine field for four generations. The cellar is managed by the oenologist Pietro Colosi who follows the various steps, from winemaking to refinement and from bottling to marketing the wines. For many years the company has been involved in the production of the ancient Malvasia delle Lipari wine. The company covers an area of ten hectares in Salina (a small island that is part of the Aeolian archipelago) between Capo Faro and Porri. This area is recognized as one of the best on the island both for its exposure and for the chemical-physical nature of the soil which, being of volcanic origin, is particularly suitable for the cultivation of vines. The planting of the vineyard, made particularly difficult due to the morphology of the soil, was carried out in terraces restoring the old dry stone walls. The company produces other typical wines in the areas of Marsala and Salemi in western Sicily.

This wine is a particularly good accompaniment for dishes based on fish or seafood.

How to serve it
The wine should be served at 10 degrees centigrade in clear, transparent crystal goblets.

How to keep
This isn't a wine that should be aged, and should be drunk within two to three years of purchase. The bottles should be laid horizontally in a cool, dark, humid wine-cellar.

The Villa Wolf Pinot Noir Rosé is made with fruit from vineyards farmed expressly for the purpose of producing a true rosé (called Weissherbst in German). Only perfectly ripe, healthy grapes are selected. Upon harvest the fruit is given a brief maceration (four to six hours) to extract a lovely salmon color from the Pinot Noir grapes. There is no saignée or coloring with red wine. The resulting wine is light and refreshing, with deliciously bright fruit flavors and a clean, zippy finish.

THE 2018 VINTAGE

The growing season in the Pfalz started early and the summer was very hot and dry, which led to an early harvest. The yields were excellent compared to the small 2017 vintage, and we were very happy to have such healthy grapes and high quality. The 2018 harvest period was unproblematic and quite smooth. Because of the dry weather conditions and the healthy state of the grapes there was no need to rush, giving us time for careful selection and very gentle handling in the cellar.

Three generations and forty years of history have transformed a small cellar into a leading player on the Friulian wine scene. Collections of superior quality wines, capable of distinguishing themselves throughout the world, offer the perfect compromise between the Friulian historical tradition and the desire for innovation. Region:Friuli-Venezia Giulia

Friuli-Venezia Giulia is an important Italian wine region, situated high in the northernmost parts of the country, and close to the Slovenian and Austrian borders. As such, there is a considerable Germanic influence on the wines of this region, with varietals such as Riesling growing alongside Italian classics such as Pinot Grigio. The finest wines of Friuli-Venezia Giulia are considered to be those which capture the alpine essence of the region, with its pine scented terroirs and crystal mountain waters which run down from the mountains. There are also several interesting lesser known grape varietals processed in Friuli-Venezia Giulia, which gives the region a unique wine culture which the local wine makers are immensely proud of, and which makes the region a fascinating one to explore. Fantinel was founded in 1969 by well known and admired hotelier and restaurateur Mario Fantinel, who was driven to produce wines that would defy the expectations of his tasteful clientele. In 1973 Mario?s sons acquired some of the finest vineyards in Collio, Grave, and Colli Orientali as well as opening a wine bar in San Daniele del Friuli. Country: Italy

There are few countries in the world with a viticultural history as long or as illustrious as that claimed by Italy. Grapes were first being grown and cultivated on Italian soil several thousand years ago by the Greeks and the Pheonicians, who named Italy 'Oenotria' – the land of wines – so impressed were they with the climate and the suitability of the soil for wine production. Of course, it was the rise of the Roman Empire which had the most lasting influence on wine production in Italy, and their influence can still be felt today, as much of the riches of the empire came about through their enthusiasm for producing wines and exporting it to neighbouring countries. Since those times, a vast amount of Italian land has remained primarily for vine cultivation, and thousands of wineries can be found throughout the entire length and breadth of this beautiful country, drenched in Mediterranean sunshine and benefiting from the excellent fertile soils found there. Italy remains very much a 'land of wines', and one could not imagine this country, its landscape and culture, without it.

Description:Very ripe, selected white Pinot grapes bring to the wine the warmth of the summer sun. Hay yellow, glittering, with an aroma of citrus fruit, white fruit, apricot jam, dried white flowers and a light scent of acacia honey. The balance between structure and acid is optimal. It is warm and soft, full-bodied with a long finish.

The color is deeper golden yellow, there are quite a few tiny bubbles of carbon dioxide in the glass. The flower is honeyed, herbaceous, medium emphasized, with a gentle animal note. In the mouth, the wine is dry, lighter, with an abundance of acid, which is expected from the ribs, but also fresh. Salty, medium-long aftertaste.

Winemaking:
For generations, the Prinčič family farm in Kozana in the Goriška brda has nurtured the vine and created its noble product. The records go back to 1848, when fruits and vines were grown on the Prinčič farm. For generations, the tradition of cooperating with nature and preserving natural resources, producing a quality crop, was transmitted, which was started by Mihael and Katarina. Today, Michael is used as a trademark of grapes harvested in special locations. The wines of this brand are refined in oak barrels: Mihael white (chardonnay, sauvignon, rebula), Mihael rebula, Mihael red (merlot, cabernet sauvignon, blue pinot), sweet Michael (merlot, cabernet sauvignon). A big recognition of our effort is the silver medal for Mihael White 2005 at the Decanter World Wine Awards 2007. Merlot, Cabernet Sauvignon, Pinot Noir ... Wines produced on the Prinčič farm are drinkable, fruity, harmonious, full of minerals from the Brda earth. In short, the wines of the Prinčič family are poetry of the Brda land.

Deep dark red in colour with a dark purple core, the Vigneto Canosini is a wine bursting with blueberry fruit and spice on the nose.

There is a touch of sour cherry on the palate, boosted by powerful blackberry and dark plums and a chunky, fruit-packed finish.

The color is deep ruby. The flower is medium emphasized, reminiscent of Bordeaux varieties, red peppers, wood, oak, a little volatile. In the mouth, the wine is dry, medium-bodied, with an abundance of tannins, with ripe acids. Mature, more robust, medium-long.

Method of Aging and Production: Ripening for 20 months in oak barrels.

Vigneti del Salento.
These areas, due to the special climatic conditions, prove to be the most suitable for the cultivation of the main vine of the area: Primitivo.

The floors, bright red bricks, are rich in iron, well draining and come from the decay of the limestone below.

The large temperature range between day and night, together with the breeze coming from the sea, favors the development of aromas in the grape; during the ripening phase, the intensity of the sun causes the grapes to dry out slightly, which further concentrates the sugars.

Wine Zolla Primitivo di Manduria DOC winemaking: All grapes are harvested manually in the early, fresh hours of the morning, when the sunrise has not yet risen, in order to preserve the maximum aromatic complexity.

All the grapes are immediately brought to the cellar, entrusted to the experienced hands of the winemakers, who take care of everything from winemaking and refining to bottling.

Characteristics: The Zolla Primitivo di Manduria by Vigneti del Salento, presents itself in a glass with deep dark purple color.

Intense nose of ripe fruit and cocoa on the nose.

This wine is intense and velvety with hints of cherry and plum.

Serving suggestion: Excellent with meat dishes, also excellent with game and aged sheep's cheese.

Medium intense ruby to garnet color. On the nose, the wine is discreet, with a scent of forest fruits and a slight buttery note to complement the barrique note. In the mouth, the wine is dry, harmonious, with ripe tannins and medium-long aftertaste.

Composition of varieties: 100% Cabernet Sauvignon

Alcohol rate: 13.5%

Method of aging and production: The grapes are macerated for 10 days in stainless steel tanks and alcohol fermentation takes place in parallel. The wine is matured in contact with yeast, 50% in stainless steel tanks and 50% in used barrique barrels, for 10 months.

Vineyards: Vineyards are 15 years old, grown under the single Guyot system. Planting density is 5,000 vines per hectare.

Wine cellar: The wine tradition of the Jakončič family farm dates back to 1847, when Mihael and Carolina Jakončič took over the first vineyards in the village of Kozana in Goriška Brda, thus laying the foundation for family winemaking. The commitment to quality grape and wine production at the Jakončič farm has been and still is of primary importance. Only this type of production, combined with specific vineyard locations, can form the basis for the production of extracted, mineral-rich and structural wines.

TASTING NOTES:
• View: delicate straw-yellow, rich lather.
• Nose: fresh flowers mixed, pulp pear, green apple and herbs.
• Mouth: smooth and refreshing, dry and with a creamy texture thanks to the effervescence.

TASTING NOTES
At sight it shows a straw yellow color; the perlage is fine and persistent. The nose aromas recall notes of linden and hawthorn, alternating with fruity nuances. In the mouth it is welcoming, medium-bodied, with excellent acidity that facilitates drinking.

PAIRING
Ideal to accompany a good aperitif, it goes well with seafood in general. It gives its best with a tuna tartare.
